Season 4, Episode 2 – 
Gino D’Acampo continues his exploration of Italy as the locals know it, meeting the people who keep age-old traditions alive and admiring the scenery. Trentino-Alto Adige is a region bordering both Switzerland and Austria, haevily forested and covering a large area of the Dolomite mountains. Gino visits Valfloriana, where dairy and meat farmers still follow ancient methods of producing food. He meets dairy farmer Graziano, who shows him how to make the local soft cheese and then uses it as his star ingredient when he whips up a quick and easy pasta dish. Gino then moves further into the mountains to learn about speck, the local cured meat
